Ingredients

  • 1 soft flour tortilla
  • 2 T butter softened
  • 1/4 tsp garlic salt
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil
  • 1 tomato sliced
  • 1/2 cup shredded mozzarella
  • 2 oz prosciutto thinly sliced
  • 2/3 cup kale or spinach, about one handful

Instructions

  • Start with the soft butter in a dish. Add the garlic salt, garlic powder and the dried basil. Using a large spoon, mix well.
  • Place the soft tortilla down and spread a spoonful of butter on it. Focusing on half the tortilla, sprinkle the mozzarella cheese down.
  • Add the sliced tomato, prosciutto, and kale. Sprinkle on a little salt and pepper.

  • Fold the tortilla in half and place in a pan on medium high. Sear on both sides until the tortilla is golden brown and the cheese is melted. Remove from heat, cut and serve.

I’m always excited and happy to share Weight Watchers recipes. Of all the recipes on this blog, they are the recipes that I make over and over again. My Weight Watchers chili is a good example of one of these recipes!

My favorite “challenge” is coming up with recipes that use zero point foods. If you’re on the Freestyle program, you know exactly what I’m talking about. There are over 200 foods that have no points, and one of them is in this recipe (you’ll see soon!).

The recipe in the spotlight today is two ingredient bagels.

If you’re part of any Weight Watchers communities online or if you’ve gone to meetings, you might have heard whisperings about these bagels. What are they? What are the two ingredients? Are they disgusting? Delicious? How do I make them?

I’m here to teach you how to make these little dough-y wheels of delight and then answer any questions you have! Because the truth is, this homemade bagel recipe pretty amazing.

You can eat these for breakfast as bagels, form into small sandwich rounds, make a large or several individual pizza crusts, or even use the dough to make pigs in a blanket.

What do two ingredient bagels taste like?

I find that this recipe tastes a little bit like dense white bread with a hint of sourdough (thanks to the Greek yogurt). Here’s what I love about this Weight Watchers dough: it’s the perfect vehicle for other “stuff.”

Other stuff like butter, cream cheese, shredded cheese, tomato sauce, and more. 

Of course those things are additional points, but these bagels are so dense, filling, and low in points that they are better than a lot of other options as a base. Having said that, I don’t mind eating them plain. I find them to be so good and a perfect substitute for other calorie and point dense breads.

Self Rising Flour vs. Regular Flour

The recipe calls for self rising flour, but to be honest you can make your own self rising flour. Just combine 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to make the shelf rising flour.

I’m going to be honest though – I don’t find that these WW bagels taste as good if I don’t use self rising flour. I always use Gold Medal self rising flour, and it is the best tasting to me. I absolutely taste a difference; maybe you won’t. I’d love to know in the comments if you are like me when it comes to flour taste!

Serves Four or Six

Ingredients

  • 1 cup self-rising flour (you can sub with gluten free flour)
  • 1 cup non-fat Greek yogurt (I recommend something with a thicker consistency like Fage)
  • Toppings like sesame seeds, poppy seeds, cinnamon, parmesan

My top tip for this recipe – these are actually delicious in the air fryer! The air fryer gives them a crispier outer shell just like a “real” bagel.

Two Ingredient Bagels

This two ingredient bagel recipe will change your life! You can incorporate this bread recipe into your rotation with no guilt. Done in under 25 minutes!

Ingredients

  • 1 1/8 cup self-rising flour
  • 1 cup fat free Greek yogurt
  • Butter or egg wash optional
  • Bagel seasoning optional

Instructions

  • Preheat the oven to 375°F. Cover a baking sheet with parchment paper.

  • Combine the flour and Greek yogurt in a large bowl; mix using a fork.
  • When the dough clumps and you feel like it's not mixing anymore, it's time to use your hands. Knead the dough in the bowl, continuing to mix the flour and yogurt together.

  • After the ingredients are completely combined, divide the dough into either four or six balls. Roll each ball out on a silicone mat or lightly floured surface. Form a long tube with each ball.

  • Form round bagel shapes with the long tubes and place on the parchment paper.

  • If desired, brush the tops of the bagels with some butter, oil, or an egg wash. You can also sprinkle on bagel seasoning.

  • Bake your bagels for 10 – 12 minutes until golden brown on top, checking for doneness. Remove from the oven and let cool for several minutes before slicing.

My husband, an aficionado of these doughy delights, would happily mortgage our house for a bite of their legendary calzones.

But let’s face it, dining out regularly can drill a hole in your wallet faster than you can say “pepperoni!”

This is where my kitchen escapades begin. Why not bring the magic of calzones into my home?

Armed with the audacity of a home chef and a no-yeast dough that promises ease over elbow grease, I embarked on a culinary quest to replicate those calzones.

When I stumbled upon this no-yeast dough recipe, it was like finding a shortcut to Disneyland. For those of you nodding in agreement, feel free to join the no-yeast bandwagon.

  • 2 cups all-purpose flour
  • 2/3 cup water
  • 2 teaspoons baking powder
  • 1/4 cup olive oil (plus 1 tsp olive oil for coating)

Pepperoni Calzones

  • Mix together in a large bowl flour, sea salt, and baking powder.
  • Add water, oil, and mix until everything is well combined and you start to see the dough forming. If using a Kitchenaid mixer, switch to the dough paddle. It will whip everything nicely and you’ll be left with a ball of dough at the bottom of the bowl. Knead the dough for about 2-3 minutes.
  • Sprinkle some flour on your station and some on your dough. Work the flour into the dough so it’s no longer sticky. Separate the dough into two balls. Each ball makes one calzone.

  • Using a rolling pin, thin out your dough. Start from left to right, then top to bottom until you have a circular or shape.
  • Use a spoon to spread the sauce down in the center of the dough.

  • Sprinkle with the mozzarella. Place the pepperoni on top.

  • Starting from the bottom, fold the dough about an inch over. Do the same from the top and then fold over the sides to seal the contents.

  • In a small bowl, combine the 1 tsp of oil, garlic salt, and basil leaves. Brush the top of the calzone. Bake in the oven on a pizza stone at 350 degrees for 15 minutes or until golden brown.

  • Allow to cool for 2-3 minutes. Cut in half and serve.

Maybe you’ve recently started the paleo or Whole 30 “lifestyle” and feel like you have to give up everything you’ve ever enjoyed. Which, I assure you, is normal. I recently got diagnosed with adrenal fatigue and my diet has had a complete overhaul.

Instead of crying over the loss of some favorites, I’ve been trying to work my way around the sorrow by making some recipes that are paleo and Whole 30 compliant. A perfect example of one of these recipes is my paleo chicken tenders.

These paleo chicken strips are crispy, crunchy, and just plain delicious! You’re not going to feel deprived at all – trust me. So grab some almond meal (Bob’s Red Mill is my favorite) and get cooking.

Paleo Chicken Strips

Chicken strips are one of my favorite ways to get lots of protein! The nice thing about this recipe is that you’ll get even more protein than standard issue chicken because of the almond meal, which is crispy and tasty. They are SO easy to make.

You simply mix almond meal and some spices together. Then you’ll dip the chicken into some egg and dredge it through the almond meal seasoning mix.

Put said chicken tenders on a baking sheet, and you’ll be ready to go in a short amount of time. Perfect for quick weeknight meal.

Almond Flour

This recipe is completely Whole 30 and paleo compliant, thanks to the use of the almond meal. Another thing I love about this dish is that it reminds me of chicken fingers when I was little (squee!).

Which means, your kids are going to love them too. They will likely have no idea that you’re using almond meal because of how crispy, crunchy, and good these are.

Serve these whole 30 chicken tenders with some sweet potato wedges on the side for a “chicken fingers and fries” meal that actually meets your nutrition goals. Oh, and need something to dip your paleo chicken tenders into? Try this Primal Kitchen ranch dressing. It’s delicious.

  • 1 lb chicken breast tenders (free range preferred)
  • 1 T coconut oil, melted
  • 1/2 teaspoon dried oregano
  • 1 teaspoon paprika
  • 3/4 teaspoon garlic powder
  • 1 egg, whisked with 1 teaspoon water
  • 2 T lemon juice (1/2 a lemon)
  • Salt and freshly cracked black pepper to taste

Seasoning Mix

  • 1/2 cup almond meal
  • 1 T parsley (fresh, finely chopped and packed)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly cracked black pepper to taste

These will last about three days in the fridge, and you should reheat them in the oven, a toaster oven, or an air fryer.

  • Dip the chicken strips in the whisked egg/water, then coat in the seasoned almond meal. Shake off the excess and arrange the chicken in a single layer on the prepped cookie sheet.

  • Bake for about 18 to 20 minutes until done. Turn once halfway through the baking process.
  • Remove from the oven, let cool for a few minutes, and serve.

I've calculated this recipe as two servings, or 1/2 lb. chicken per person. If you have folks that are lighter eaters, this will definitely serve three!
