Make creamy Campbell’s Soup chicken and rice risotto with this easy recipe—perfect for a comforting, one-pot meal everyone will love! Done in 30 minutes.

cream of chicken risotto with Campbell's soup

The story is a little backwards of how I came to make this risotto with cream of chicken soup. It started with this OXO 3-quart covered saucepan I found at Bed, Bath & Beyond on clearance.

I was SO excited to find it because I only have one sauce pan and it’s small, so I can’t cook any one pan recipes. My life just hasn’t been complete, I tell you!

I purchased it immediately and my first order of business was to try a dinner recipe in it. That night. And that is how this one pan chicken risotto recipe came to be!

One criteria for this one pot recipe, besides the one pot thing, was that it be easy and delicious. I knew I wanted to use a protein (hence the chicken), and then have some veggies and rice as well.

risotto with cream of chicken soup

I also knew I wanted it to be filling, and this recipe fits the bill. It’s good for families, and for kids who don’t exactly like their veggies (they won’t even know!).

You can also substitute the white rice for brown if you are so inclined. I’ll leave that up to you. Here’s how it’s done.

Discover the easy recipe for two-ingredient bagels! Learn how to make delicious, fluffy bagels with just Greek yogurt and self-rising flour. Perfect for quick, homemade treats. WW friendly.

two ingredient bagels

I’m always excited and happy to share Weight Watchers recipes. Of all the recipes on this blog, they are the recipes that I make over and over again. My Weight Watchers chili is a good example of one of these recipes!

My favorite “challenge” is coming up with recipes that use zero point foods. If you’re on the Freestyle program, you know exactly what I’m talking about. There are over 200 foods that have no points, and one of them is in this recipe (you’ll see soon!).

The recipe in the spotlight today is two ingredient bagels.

If you’re part of any Weight Watchers communities online or if you’ve gone to meetings, you might have heard whisperings about these bagels. What are they? What are the two ingredients? Are they disgusting? Delicious? How do I make them?

weight watchers bagel recipe

I’m here to teach you how to make these little dough-y wheels of delight and then answer any questions you have! Because the truth is, this homemade bagel recipe pretty amazing.

You can eat these for breakfast as bagels, form into small sandwich rounds, make a large or several individual pizza crusts, or even use the dough to make pigs in a blanket.

What do two ingredient bagels taste like?

I find that this recipe tastes a little bit like dense white bread with a hint of sourdough (thanks to the Greek yogurt). Here’s what I love about this Weight Watchers dough: it’s the perfect vehicle for other “stuff.”

Other stuff like butter, cream cheese, shredded cheese, tomato sauce, and more.

Of course those things are additional points, but these bagels are so dense, filling, and low in points that they are better than a lot of other options as a base. Having said that, I don’t mind eating them plain. I find them to be so good and a perfect substitute for other calorie and point dense breads.

Self Rising Flour vs. Regular Flour

The recipe calls for self rising flour, but to be honest you can make your own self rising flour. Just combine 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to make the shelf rising flour.

I’m going to be honest though – I don’t find that these WW bagels taste as good if I don’t use self rising flour. I always use Gold Medal self rising flour, and it is the best tasting to me. I absolutely taste a difference; maybe you won’t. I’d love to know in the comments if you are like me when it comes to flour taste!

Serves Four or Six

Ingredients

  • 1 cup self-rising flour (you can sub with gluten free flour)
  • 1 cup non-fat Greek yogurt (I recommend something with a thicker consistency like Fage)
  • Toppings like sesame seeds, poppy seeds, cinnamon, parmesan

My top tip for this recipe – these are actually delicious in the air fryer! The air fryer gives them a crispier outer shell just like a “real” bagel.

pasta con brocolli

Growing up, this pasta was not just a meal; it was a celebration on my plate. I requested it every year for my birthday, savoring each bite that was lovingly prepared by my family. Inspired by the iconic Pasta House in St. Louis, this dish has evolved in my kitchen while still holding onto its roots.

It’s also akin to the beloved recipes from Rich and Charlie’s – another gem from the St. Louis Italian dining scene – but with my personal touch that makes it unique and special to my family.

The real secret to this dish lies in its creamy, dreamy sauce. Patience truly is a virtue here – rushing will only lead you to a lumpy disaster!
