But let’s not forget an important and less often mentioned flavor of the season, which is actually a spice: cinnamon!

Cinnamon pairs well with just about anything that you could eat during fall, let’s be honest. And I’m excited to share a cinnamon recipe today that I promise everyone is going to love: cinnamon roll monkey bread.

Basically cinnamon rolls and monkey bread decided to have a delicious baby, and we’re all invited to the baby shower.

Imagine pulling apart soft, fluffy pieces of dough, each piece a perfect blend of cinnamon, sugar, and everything nice, with a hint of buttery goodness that makes your mouth water.

And the best part? You get the flavors of a cinnamon roll without the hassle of actually making cinnamon rolls from scratch. It’s a very sweet shortcut.

This recipe is straightforward – no fancy techniques or obscure ingredients. Just simple steps to a breakfast that will have everyone at the table asking for seconds. It’s perfect for lazy weekends, impressing your brunch guests, or just because you deserve something nice.

Ingredients

  • 2 cans cinnamon rolls with icing (8 rolls per can)
  • 1/3 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons butter, melted
  • 2 tablespoons brown sugar
  • 2 tablespoon maple syrup
  • 1/2 cup chopped pecans or walnuts (optional)

Tips and Thoughts for This Recipe

Be sure the butter is hot when adding the brown sugar and maple syrup. This will make the sauce warm and easy to drizzle. If cooled, drizzling will be difficult.

If the monkey bread is sticking inside the pan, run a knife along the edges, then take a meat mallet or rolling pin and gently hit the top of the pan while upside down on a plate until it releases. Be sure to heavily spray with cooking spray or butter to prevent this. Use a plastic knife to avoid scratching the pan.

When using a standard size Bundt pan the bread may not look like much, but it will puff up quite a bit when baking.

  • Open the cans of refrigerated cinnamon rolls and separate them. You'll have 16 individual rolls. Cut each cinnamon roll into quarters. This will give you bite-sized pieces to work with.

  • Roll each quartered cinnamon roll piece in the cinnamon-sugar mixture until it's well-coated. You can also do this by placing the sugar mixture in a zip-top bag and tossing the pieces in it for even coating.

  • Arrange the coated cinnamon roll pieces in the prepared Bundt pan, creating layers. If you'd like to add some crunch and flavor, sprinkle the chopped pecans or walnuts between the layers.

  • In a small bowl, mix together the melted butter, brown sugar, and maple syrup until well combined.

  • Pour this mixture evenly over the cinnamon roll pieces in the Bundt pan. Try to keep the sauce right on top of the cinnamon roll pieces and not let it run down the sides. Letting it run down the sides will make it difficult for the monkey bread to come out of the pan because a pool of caramel may form at the bottom.

  • Bake for 30-35 minutes, or until the monkey bread is golden brown and the cinnamon rolls are cooked through.

  • Remove the monkey bread from the oven and let it cool in the pan for about 5 minutes. This allows the caramel sauce to thicken slightly. Don’t let it cool much longer than 5 minutes, or it will be too hard to remove from the pan.

  • Put the icing in a microwave safe bowl and heat for 10-15 seconds. Drizzle the icing over the monkey bread. Let set before serving.

I didn’t try overnight oatmeal until recently. Let’s be honest – I was dumb. I thought overnight oats might be soggy and that it just wouldn’t appeal. BOY was I wrong!

You can eat these oats either hot or cold. What I’ve noticed is that overnight oatmeal is typically made hot for breakfast and cold for dessert. People also make them hot in winter, cold in summer. The choice is really up to you. I like them both ways.

You will want to use old fashioned rolled oats for this recipe. Instant oatmeal gets too soggy, and steel-cut oats tend to remain a lot more chewy unless they soak for quite a long time.

If you like chewy, then you might want to go for the steel-cut oats. But for me, old fashioned rolled oats are perfect and have the best consistency, hot or cold!

One thing this recipe has over similar peanut butter recipes is a lower calorie and fat count. The secret is PB2! Have you heard of this magical peanut butter powder?

I order it by the (big) jar and use in to replace regular peanut butter. It has 85% less fat calories than traditional peanut butter, is all natural, and has no additives.

I know I sound like an advertisement but it’s THAT good . . . and when you’re watching your calories, it’s perfect for that peanut butter-y taste.

Also note you can make these chocolate and peanut butter oats with water, almond milk (like I did), soy milk, coconut milk . . . some people even make oats with juice!

Are you ready for the recipe? This overnight oats recipe is EASY and makes quite a bit in a short time frame. It took me about five minutes to put everything together and get it all into individual mason jars.

You’re not going to regret trying this – I promise. First, here’s what you’re going to need.

Ingredients

  • 3 cups oats
  • 3 cups unsweetened vanilla almond milk (or regular milk)
  • 1 cup plain yogurt
  • 1 cup PB2
  • ¼ c honey (or maple syrup)
  • 1/2 c mini chocolate chips

Tips and Tricks for This Recipe

You don’t have to try our recipe as-is. It’s relatively standard to start with 1:1 dried ingredients and liquid for any overnight oatmeal and go from there depending on your desired consistency.

That means for everyone one cup of oats and ingredients, you’ll add 1 cup of milk (or water, or whatever you choose).

Possible ingredients/toppings include:

  • Fresh fruit – strawberries, bananas, blackberries, blueberries, raspberries
  • Dried fruit – dried apples, apricots, cherries, shredded coconut, cranberries, figs
  • Granola, flaxseed meal or chia seeds
  • Nuts – Almonds, walnuts, pecans (use as a topping the next day if you don’t want them soggy)
  • Spices – nutmeg, cinnamon, cocoa powder, pumpkin pie spice

It’s pretty fun to experiment with some different combinations and see which one is your favorite!

Ingredients

  • 3 cups old fashioned oats
  • 3 cups unsweetened vanilla almond milk
  • 1 cup plain yogurt
  • 1 cup PB2
  • 1/4 cup honey
  • 1/2 cup mini chocolate chips

Instructions

  • Stir all ingredients except chocolate chips in a bowl. Divide between 6 containers or jars.
  • Cover and refrigerate overnight. 
  • In the morning, heat up to desired temperature and sprinkle with chocolate chips.
